Biscoff Lava Mug Cake

Ingredients π (Serves 1)
Filling:
2-3 tbsp Biscoff creamy cookie butter (frozen)
Batter:
1/2 cup Biscoff creamy cookie butter
1 egg
2 tbsp self-rising flour
If you don't have self-rising flour, use 2 tbsp all-purpose flour + 1/4 tsp baking powder + a pinch of salt
Powdered sugar for dusting, optional
Instructions π§βπ³
To prep the filling, place 2-3 tbsp of Biscoff cookie butter on a parchment-lined plate and freeze for 30-60 minutes or until firm.
In a small ramekin or mug, mix 1/2 cup Biscoff cookie butter, egg, and flour until smooth and well combined.
Place the frozen cookie butter dollop in the centre of the batter, pushing it slightly so it's submerged.
Microwave on high for 90 seconds.
Dust with powdered sugar if desired and enjoy immediately!
