  • 2-3 tbsp Biscoff creamy cookie butter (frozen)

Batter:
  • 1/2 cup Biscoff creamy cookie butter

  • 1 egg

  • 2 tbsp self-rising flour

    • If you don't have self-rising flour, use 2 tbsp all-purpose flour + 1/4 tsp baking powder + a pinch of salt

  • Powdered sugar for dusting, optional

  • To prep the filling, place 2-3 tbsp of Biscoff cookie butter on a parchment-lined plate and freeze for 30-60 minutes or until firm.

  • In a small ramekin or mug, mix 1/2 cup Biscoff cookie butter, egg, and flour until smooth and well combined.

  • Place the frozen cookie butter dollop in the centre of the batter, pushing it slightly so it's submerged.

  • Microwave on high for 90 seconds.
